Bon Appetit

I have a subscription to Bon Appetit. I got it really cheap--I think it was $3.99 from Magazine Values.com Magazine Values (Now the subscription is up to $24). Anyway, I thought that I would enjoy the magazine, but I'm so annoyed by the advertisements. I feel like that is what the magazine is--one big ad. I have the January issue at home and there is at least a 7 page ad in the middle of the magazine for Anolon and Kitchen Aid. Since it is the January issue, it's small as it is. Needless to say, I don't think I'll be renewing the subscription. Bummer.

Every Day with Rachael Ray

Have you picked up a copy of Rachael Ray's magazine? Fresh Every Day is the name. I'm a Rachael fan, so I had to pick it up. I actually like it more that I thought I would. I like the mix of recipes and other schtuff--like the travel features and the what cooks want gift list. Maybe it's because I'm nearly obsessed with all things food? I know that sometimes Rachael gets a bad rap for being "annoying" with her cutsie sayings like EVOO or Yum-o, but I admire the fact that her books and 30 Minute Meals encourage anyone to cook. I think some people are intimidated to cook and I think she lays it out and says hey--this isn't scary; you can do it!

Recipe of the Day..Tomato Basil Cream Sauce

This recipe was given to me by a friend and it is so good! I leave out the chicken and just serve the sauce over angel hair pasta and serve with a salad, good bread and good wine.

Chicken In Tomato Basil Cream
1 tbs butter or margarine
1/2 C finely chopped onion
1 can (14 oz.) plum tomatoes, coarsely chopped
1/2 C heavy or whipping cream
1/2 C thinly sliced fresh basil leaves
1/2 tsp salt
1/2 tsp freshly ground pepper
6 boneless skinless chicken breast halves

Heat oven to 450 F.Heat butter in skillet over medium heat. Add onion and cook untilsoftened, 5 minutes. Increase heat to high; add tomatoes and cook until liquid is almost evaporated, 5 to 10 minutes. Add cream and bring to boil. Boil until slightly thickened, 3 minutes. Stir in basil, salt and pepper. Arrange chicken in shallow baking dish; pour sauce on top. Bake 20 minutes. Makes 6 (kinda small) servings.

WCHA Results--Dec 3&4

And I thought my picks were solid. Ha!

Friday night was looking good--I was batting .1000. UMD, St. Cloud State, North Dakota, Wisconsin and Denver all won. Then Saturday came. UMD and Mankato tied. St. Cloud lost. Wisconsin won. Denver one. Oy.

UMD (1 win; 1 tie) and Mankato
St. Cloud State (1 win) and Alaska Anchorage (1 win)
North Dakota (2 wins) and Michigan Tech
Wisconsin (2 wins) and Minnesota
Denver (2 wins) and Colorado College

I'll brush up for this coming weekend....

WCHA Hockey, December 2-3

I think a hockey post is in order.

This weekend's WCHA games:

Denver v. Colorado College
St. Cloud State v. Alaska-Anchorage
Minnesota Duluth (UMD) v. Mankato
North Dakota v. Michigan Tech
Wisconsin v. Minnesota

My predictions (my first week of predictions!): North Dakota will sweep Michigan Tech. Wisconsin will win 1 game and tie the other. UMD will split with Mankato. St. Cloud State will sweep. Denver and CC will split.

That said, let's go UMD!
